Black Bean Rice with Apple Salsa
2 cups brown rice cooked
2 Tbs Olive Oil
1/2 red onion diced
3 cloves garlic minced
1 1/2 tsp chili powder
1/2 tsp ground cumin (I'm not a cumin lover but if you are you could use 3/4 tsp)
2 cups chicken broth
2- 15oz cans black beans, drained and rinsed
1 apple cored and diced
1/4 cup chopped parsley
1/4 cup chopped shallots (*1/8 cup green onion substitute)
1 tsp lime juice
1 red pepper diced
1 yellow pepper diced
**Confession time here! I couldn't find shallots so substituted green onions and only added about 1/8 cup chopped green onion (the white part) instead of shallots because green onion is (I think) stronger than shallots!
Also, the original recipe called for the peppers to be sauteed with the onion, but I didn't read that part right and added them as part of the cold apple salsa and really they are better for you fresh and turned out yummy, so take your pick! OK, back to the recipe:
Heat oil over medium heat. Add red onion (*and peppers if you must! ;-)) and cook until softened, 6-7 min. Add garlic, chili powder and cumin and stir for a minute. Add broth and beans and rice and bring to a boil. Simmer (on low now) uncovered about 10-15 min until thickened slightly. (I wouldn't be picky about exact times here - just go ahead & make your salsa and by the time that's done, it has probably simmered enough!)
While that is simmering, in a small bowl, combine the apple, parsley, shallot (*green onion) and lime juice. Stir together and season with salt and pepper.
Serve apple salsa over bean and rice dish.
For those of you used to sweeter things, you could saute the peppers and then add mango to the fresh apple salsa instead! Just a thought! (Thank my sister-in-law for the mango idea!) :-)

What is a holistic health coach?
So often we hear the question, "What is a holistic health coach? What are you selling?"
I wish there was a one sentence answer! Sometimes I feel like calling myself a Cheerleading Health Therapist. Or maybe better yet, I am like a Health Detective looking for clues, helping you find the healthy you, that is currently missing! I guess if there is something I am selling, it's me. I am selling you my time, invested in you!
But maybe none of that explains exactly what we do. . .
There is no perfect diet for everyone, no fabulous new workout or magic supplement that will instantly fix everything and give you the perfect body in a perfect life! And crazily enough, our diet (what we feed ourselves) is affected by so much more than what and how we eat! We are affected by our beliefs, our emotions, our experiences, our relationships and how we react to all of those things!
A big part of what we have been taught as health coaches, is how to listen. And it makes perfect sense! What is the first thing the nurse or doctor does when they walk in the room? They listen to your body - your heart, your lungs, your blood pressure etc. They look inside you for clues - your eyes, nose, ears and throat. Why is that? Because all of the clues they need to "fix" what ails you, can only come from your body! They have been trained to look for certain issues for which they have been taught certain remedies.
Now we are not doctors. But we are trained to do something similar. We are taught how to listen to you (the mouthpiece for your body) and then, instead of being taught remedies, we have been taught preventative measures that will help you identify the root problem(s) and then teach you how to take charge of your life and make changes in your life so those symptoms need never show up again!
In reality, it doesn't matter what is wrong with you, every symptom no matter how big or small,(obesity, heart disease, cancer, asthma, allergies, an ache in your back, migraines, stiffness in your joints) they are all just your body's way of telling you something is wrong and something needs to change! Please know that I am not minimizing any of those things - they are serious and some can be life threatening! But, wouldn't it be grand if instead of looking for a cure for things, we could look at preventing them from ever happening in the first place?
My job as your coach, is to teach you how to listen to your body and interpret your own feelings and symptoms. Initially, I meet with my clients for 1 hour, 2 times a month, for 6 months and even though I have literature and an actual program we go through, and I can and do teach you all about nutrition and food, my clients are the ones that determine the course we take. Every single person is so different and each one has different needs and is experiencing such different things. You talk and I listen to what you say and don't say and it is all like little clues that when you follow them down to the core, reveal the root of the problem. Then with just a little strength, that root can be removed and replaced with something healthy that will bear the fruit you need! Sometimes it's something you can do on your own - it just had to be revealed to you and then you know exactly what to do to remove it. But sometimes bigger tools and more strength is needed and that is where I come in. Remember that cheerleader I mentioned at the beginning of this article? That may sound a little cheesy, but when was the last time you had someone sit and listen to you? Just you? Describing exactly what it's like to be you every day? And then have that same person acknowledge that it all matters and is important and there IS something you can do to make things better for yourself? And then that person wants to be there for the journey, encouraging you on? That's me! I get the fun job! ;-) And I LOVE it! You don't have to depend solely on any great wisdom I possess (thank heavens!) it really is just a journey that we take together where your cheerleader has the privilege of learning as much as you do along the way!

If I had to simplify it in my own words, I would tell you that holistic health coaching just means taking into account all aspects of a person's life - psychological, physical, emotional, spiritual and social, when helping a person create a life plan. We aren't concerned with a temporary "diet" or exercise plan, we want to help you understand how you want to feel and live and then learning what you need to do and feed yourself for a lifetime, to accomplish that!
How do you want to live the rest of your life? What do you want to look and feel like at 70 yrs old? Because I don't care who you are, your future does NOT have to be the same as your today!

Salt of the Earth
A term we use with someone who is everything they should be - she's the salt of the earth! Well, the salt you intake should be as well!
Sea Salt vs Kosher Salt. Am I an expert? Heavens no! But I can share what I do know and what I prefer.
Between Sea Salt and Kosher Salt, I choose Sea Salt. Unrefined Sea Salt to be exact. The refining process strips nutrients from things, which isn't good! Unrefined Sea Salt contains essential minerals that help to neutralize acid in our bodies - a very good thing! Kosher Salt is just sodium without the minerals our bodies need.
The key (as with any food) the less ingredients the better! And the less processing it has been through, the better!
So look for sea salt that isn't white (it's been bleached) and only has one ingredient: 100% Salt.
(Watch, because so many salts sneak in anti-caking agents! Sounds reasonable - who wants cakey salt? But remember, the goal should always be to eliminate additives!)
The brand I prefer and order online, is called REAL SALT.

Eek! I'm a freak?!
It's official! I am a health freak . . . according to my son! At least that is
what he informed me of (in WAY too loud of a voice) in the checkout line at
Walmart. “THIS!! Is why we call you a health freak!” (Referring to the injustice
of not being allowed to get a super sized bag of Nacho Doritos chips for he and
his little sister.)
He’s right you know! I have turned into one of
“them”!! The kind of person that reads labels and doesn’t have refined sugar
and processed foods in my house and eats vegetables all the time instead of chips. And you know what made the difference for me?
What changed me from "normal" to "health conscious"?
INFORMATION! That's it. (Oh, and not wanting to end up with diabetes, heart disease, obesity and cancer like so many among our family and friends.)
I
still love chocolate, and carmel machiatto’s and could eat a whole loaf of
sourdough bread in one sitting. But now I have information in my head that
literally forces my steering wheel away from Starbucks and guides me back home
- where I drink refreshingly cool water with blueberries in it, from a long
stemmed glass and pretend I am one of those perfectly tanned and toned, rich ladies I used to watch
play tennis at Hotel Coronado, years ago.
Getting my carmel machiatto with 2 extra pumps of
vanilla, (stirred) from the barista that knew my name and made it exactly like I wanted it, was all about the
feeling. So I had to change how I felt about drinking water! I went back to a
different kind of school and started surrounding myself with people who knew
more than I did, and I started listening. INFORMATION!
I didn’t just change the way I eat –I’m teaching
myself why I eat the way I eat. And that makes all the difference!
Now I have the strength to ignore all the whining (from
others and mostly myself) for a quick fast food fix at night. I have the energy
and the patience to just keep chopping along, fixing our supper, until we all sit
down together as a family and I can look around the table and know we are
feeding our bodies what they need and there is nothing being served I have to
feel guilty about!
Perfect? Nope! Easy? Not always! Worth it? Without
a doubt!
So here's to anyone trying in even the slightest
way to improve your health! Way to go! This health freak thinks you should keep
on asking questions, exploring & experimenting! One less french fry? A
little more water? Adding some veggies in? Taking that walk? Keep it up! Or maybe even try
my blueberry water and join me on the courts of Coronado!
